Over the last 21 years we’ve made a lot of progress in our quest to source the best ingredients we can find. Read below to learn more about some of the ways the ingredients we serve are raised responsibly.

Local

At Chipotle, we define "local" as any ingredient that comes from a farm located within 350 miles of the restaurant where it is served. In 2014, we bought more than 20 million pounds of local produce, including avocados, onions, peppers, cilantro, lemons, and tomatoes. Ingredients marked with an "L" may be purchased locally, depending on location and time of year.

RESPONSIBLY RAISED™ MEATS

We believe that animals should be treated with dignity and respect, and that the best way to do that is to allow them to display their natural tendencies. When sourcing meat, we work hard to find farmers and ranchers who are doing things the right way. This includes raising animals humanely, without the use of subtherapeutic antibiotics or added hormones.

Organic

We support farmers who follow responsible practices and seek to nourish healthy soil. USDA organic certification is among the most widely accepted standards for responsible agriculture. A substantial portion of the following ingredients we serve are grown organically: avocados, black beans, brown rice, cilantro, jalapeños, oregano, and pinto beans. Items marked with the "O" here are those ingredients we frequently buy from farmers following organic practices.

Pasture-Raised dairy

We believe cows are at their best spending their days outside, chewing their cud in a relaxing atmosphere. That's why we strive to serve cheese and sour cream made with milk from cows given daily access to pasture. In 2014, a majority of the the cheese and sour cream we served was made with milk from pastured dairy cows.

GMOs

The WHO (that's the World Health Organization, not the seminal British rock band) defines Genetically Modified Organisms (GMOs) as “organisms in which the genetic material (DNA) has been altered in a way that does not occur naturally." Our goal is to eliminate GMOs from Chipotle's ingredients, and we're working hard to meet this challenge. For example, we recently switched our fryers from soybean oil to sunflower oil. Soybean oil is almost always made from genetically modified soybeans. Sunflowers, however, have not yet been genetically modified, thus making sunflower oil a great non-GMO alternative. Where our food contains currently unavoidable GM ingredients, it is only in the form of corn or soy.

In the United States at this time, most of the grain used as animal feed is genetically modified. This includes most of the grain used to feed the animals that provide our meat and dairy. While we are striving to eliminate GMOs from our supply chain, there is currently not a viable supply of responsibly raised meats and dairy from animals raised without GMO feed. Responsibly raised food is a journey and we’re always striving to source better ingredients. We recognize that the feed given to the animals that produce our meat and dairy is an area for potential improvement.

Preservatives

Preservatives keep food fresh longer, usually by inhibiting the growth of mold, yeast, and some bacteria. We are working with our tortilla suppliers to reduce and eventually eliminate artificial preservatives from our tortillas.

The cheesemakers that supply our cheese do not use animal-based rennet. As a result, the cheese we serve is suitable for vegetarians.

Lime (mineral)

To produce tortillas according to the centuries-old process of Nixtamalization, corn is soaked in a lime solution. This practice, which has been followed in Mexico since before the days of Christopher Columbus, improves the flavor and increases the nutritional value of the corn.

Propionic Acid

Propionic Acid is used as a preservative, as it inhibits the growth of mold and bacteria.

Benzoic Acid

Benzoic Acid is used to preserve the freshness of tortillas by inhibiting the growth of mold, yeast, and some bacteria.

Sunflower Oil

We fry our chips and crispy corn tortillas in non-GMO sunflower oil.

At restaurants in California, Oregon, and Washington, we serve Chips made with non-GMO Corn Masa Flour (Ground White Corn Masa Flour, Cellulose Gum, Guar Gum, Trace of Lime (mineral)), Water, Sorbic Acid , Calcium Propionate , Fumaric Acid , Sodium Propionate, Kosher Salt, Lime Juice, Sunflower Oil.

Hydrogenated oils

Hydrogenated Oils are vegetable oils treated with heat, pressure, and hydrogen to create a fat that is solid at room temperature, much like butter or other animal fats. Foods containing hydrogenated oils stay fresh longer. We're working to find alternatives to hydrogenated oils to improve the shelf life of our tortillas, and hope to be able to eliminate hydrogenated oils from our tortillas someday.
