Responsibly-Raised Meats
RESPONSIBLY RAISED™ MEATS
We believe that animals should be treated with dignity and respect, and that the best way to do that is to allow them to display their natural tendencies. When sourcing meat, we work hard to find farmers and ranchers who are doing things the right way. This includes raising animals humanely, without the use of subtherapeutic antibiotics or added hormones.
Organic
ORGANIC
We support farmers who follow responsible practices and seek to nourish healthy soil. USDA organic certification is among the most widely accepted standards for responsible agriculture. A substantial portion of the following ingredients we serve are grown organically: avocados, black beans, brown rice, cilantro, jalapeños, oregano, and pinto beans. Items marked with the "O" here are those ingredients we frequently buy from farmers following organic practices.
Pasture-Raised Dairy
PASTURE-RAISED DAIRY
We believe cows are at their best spending their days outside, chewing their cud in a relaxing atmosphere. That's why we strive to serve cheese and sour cream made with milk from cows given daily access to pasture. A majority of the cheese and sour cream we serve is made with milk from pastured dairy cows.

NON-GMO

The WHO (that's the World Health Organization, not the seminal British rock band) defines Genetically Modified Organisms (GMOs) as “organisms in which the genetic material (DNA) has been altered in a way that does not occur naturally." Over the years, as we have learned more about GMOs, we’ve decided that using them in our food doesn’t align with that vision. Chipotle was the first national restaurant company to cook only with non-GMO ingredients.

The meat and dairy products we buy come from animals that are not genetically modified. But it is important to note that most animal feed in the U.S. is genetically modified, which means that the meat and dairy served at Chipotle are likely to come from animals given at least some GMO feed. We are working hard on this challenge, and have made substantial progress: for example, the 100% grass-fed beef served in many Chipotle restaurants was not fed GMO grain—or any grain, for that matter. In addition, many of the beverages sold in our restaurants contain genetically modified ingredients, including those containing high fructose corn syrup, which is almost always made from GMO corn.

Preservatives
PRESERVATIVES
Preservatives keep food fresh longer, usually by inhibiting the growth of mold, yeast, and some bacteria. We are working with our tortilla suppliers to reduce and eventually eliminate artificial preservatives from our tortillas.

Black Beans

A portion of the black beans we use are produced organically. In 2014, we purchased over 4 million pounds of organic black beans.

Pinto Beans

A portion of the pinto beans we use are produced organically. In 2014, we purchased over 2.5 million pounds of organic pinto beans.

Enzymes

The cheesemakers that supply our cheese do not use animal-based rennet. As a result, the cheese we serve is suitable for vegetarians.

White Sweet Corn

We use non-GMO white sweet corn in our Roasted Chili-Corn Salsa.

Lime

To produce tortillas according to the centuries-old process of Nixtamalization, corn is soaked in a lime solution. This practice, which has been followed in Mexico since before the days of Christopher Columbus, improves the flavor and increases the nutritional value of the corn.

Sunflower Oil

We fry our chips and crispy corn tortillas in non-GMO sunflower oil.

Propionic Acid

Propionic Acid is used as a preservative, as it inhibits the growth of mold and bacteria.

Benzoic Acid

Benzoic Acid is used to preserve the freshness of tortillas by inhibiting the growth of mold, yeast, and some bacteria.

Monocalcium Phosphate

Monocalcium Phosphate, a common ingredient in baking powder, is used as a leavening agent.

Fumaric Acid

Used as a dough conditioner in baking powder, fumaric acid helps improve the texture and pliability of dough.

Calcium Sulfate

Calcium sulfate is a naturally occurring mineral that has been used as a coagulant in the tofu-making process for more than 2,000 years.
